Just follow our easy and fool proof stove top Fish Boil recipe, which serves four. Because the traditional style recipe is simple even a novice chef can accomplish impressive results. In a short time, and with surprisingly little effort, you can treat family and friends to your favorite Door County treat.
Ours is a stove-top recipe Do Not throw kerosene onto your stove!, neither the fire department or your insurance carrier will be impressed
Cooking times will vary depending on type of stove and kettle size used. Don’t worry we show you how to tell when your fish is done just right.
Equipment You Need
One 5 gallon pot
A removable basket for the pot, a large steamer with removable basket works great.
(If you don’t have a basket simply use two (2) 2’ X 2,, pieces of cheesecloth. Or use a colander to drain the pot
Ingredients
- Eight (8) quarts water
- Two (2) cups salt
- Twelve (12) white fish steaks, cut about 2 inches thick
- Twelve (12) small to medium red potatoes
- Melted butter, to your taste. We like a lot for dipping
- Lemon wedges
Time to Cook
Get the water boiling and try to keep it boiling through the entire cooking process. Cut the potatoes in half-length wise. If the water is not boiling yet place the cut potatoes in a large bowl, cover with cold water and add 2 tablespoons of lemon juice to keep them from turning brown.
Add the potatoes to the boiling water and pour in one (1) cup of the salt, cook them for about 20-25 minutes. The potatoes are nearly done when you can easily poke a fork into them.
Add the whitefish and the reserved cup of salt.
If you are not using a boiling basket bag the fish in one piece of cheesecloth and the potatoes in another and tie off the top.
Cook 7 to 10 minutes, the fish should be firm but will slightly separate from the bone when pulled with a fork.
While cooking skim off any fish oil that may rise to the surface with a spoon or small skimmer.
Do not use kerosene to boil off the fish oil.
Lift the fish and potatoes out of the water, use hot pads gloves to avoid steam burns. Let excess water drip off.
Serving Suggestions
Serve hot with melted butter and lemon wedges.
